Go WEBER Wildcats


Tonight we went to the Weber State basketball game.  Me and Kent try to go as often as we can.  We really enjoy the games and we have a friend that plays on the team, Darrin Mahoney.  Tiffany and the boys usually come with us.  Landen had a really nice boy, across the isle from us, give him a wildcat claw.  That was the best!  We had a great time and Weber won!  With 2.4 seconds we were down by two.  Darrin inbounded the ball to half court.  Another player threw up a shot and it went in!!!!  A three pointer.  We won!  It was a great time!

January with our Family


Both Kent and Zach celebrated Birthdays in January.  To celebrate we went bowling at Fat Cats in Ogden on Kent's Birthday.  It was so much fun, something everyone can do.  Landen has a great time bowling (in between running over to the arcade and checking out the games).  It is a great deal to.  Six people can bowl for 75 minutes and enjoy a large pizza, yummy bread sticks and two pitchers of pop for $50.  We have done it a couple of times and really enjoy it.  HAPPY BIRTHDAY Kent and Zach.  We won't tell you how old they are ha ha.


It's Official, Kristen and Zach are having a BOY!  We are all way excited.  This will be our third grandson and the boys will all have cousins close to their age.  That will be so fun!  Kents sister just found out her son Preston and his wife Carly will be having a boy two.  It will be her 12th grandson. Yep that is right 12 grandsons and no granddaughters.  Crazy, but way exciting.  CONGRATS Kristen and Zach.


About a week ago Kent helped Landen set up his new train tent in the living room at their house. It was a little tricky for his mom so papa to the rescue.  Landen loves to eat, read and watch movies in his tent.  It will stay up for days before they take it town.  WAY TO GO PAPA, you were alot of help! 


Carter is 8 months old now.  He is growing so fast and looking so handsome.  Those big blue eyes are so sweet.  And . . . he has learned how to crawl.  Yeah! He has been so frustrated because he couldn't move around like his big brother.  He really wants to be where everyone is and not miss out on any of the action.  Tiffany and Rob will be scheduling his next surgery soon.  Probably around the first part of March.  This time he will most likely be in the hospital for about three days.  Thanks to everyone for your support and prayers, it is very much appreciated.


RECIPE OF THE MONTH - Creamy Chicken Enchiladas

1 T butter or margarine                     1 can Rotel tomatoes and green chilies (mild)
8 oz cream cheese cut into cubes      2 cups chopped cooked chicken
8 (8") flour tortillas                            2 cups shredded Monterey Jack Cheese
1 pint carton whipping cream

Preheat oven to 350 degrees.  Spray 9 x 13" backing dish with pam.  Melt butter in large skillet over medium heat.  Add Rotel and saute for 1 minute.  Stir in cream cheese and chicken.  Cook stirring constantly until cream cheese melts.  Spoon 2 to 3 tablespoons of chicken mixture down center of each tortilla.  Roll up tortillas and place seam side down in baking dish.  Sprinkle with shredded cheese and drizzle with whipping cream.  Cover with foil and bake at 350 degrees for 30 minutes.  Take off foil and bake for another 15 minutes or until top is golden brown.

This is one of our family favorites.  It is not for the healthy eater, but a perfect splurge!  Hope you enjoy it!
